Sonia DeLeon
De LEON, Sonia (Toti), Filipino food sciences expert, b-1938. A professor at U. of the Philippines (Manila). Sonia has written widely on relevant food technology, which involves preservation of tropical fruits and vegetables (which endure long periods of transportation in hot climates). Eventually, realising that her own work and the department’s were very patentable, this aspect of their endeavours is now pursued seriously. Sonia looks for alternative uses for the islands natural products. Examples are wine and vinegar from pineapples, dietary fibre from coconuts, and the use of coconut flour in cooking processes (for enrichment), microbial biomass protein. Her nickname Toti means tutti-frutti
